Original Mee Goreng (OMG) NuMee

Ingredients
- 1/4 cup cooking oil
- 2 medium sized red onions, blended
- 3 cloves of garlic, blended
- 2 tbsp of dried prawns, soaked in hot water and blended
- 3 tbsp chilli paste
- 4 tbsp tomato sauce
- 1 tbsp sweet soy sauce
- 2 pieces of skinless, boneless chicken breast, sliced
- 2 tomatoes, cut into wedges
- 1/2 cup of water
- 1 tsp salt
- 1 tsp sugar
- 1 pack of yellow noodles
- 200 gms beans sprouts
- 6 stalks of chives. sliced into 2inch lengths
- 4 half boiled eggs
- 3 red birds’ eye chillies, sliced
- 3 green bird’s eye chillies, sliced
- 3 tbsp crispy fried yellow noodles, chopped coarsely
- 50 gms of salad/lettuce
- 12 cherry tomatoes, halved
- 4 calamansi lime, halved
how to cook
- Heat the oil in a wok.
- Saute’ the blended onions, garlic, dried shrimps & chilli paste till fragrant for 1 minute.
- Scoop the tomato sauce & soy sauce into the wok.
- Put in the chicken slices and cook for 2 minutes until it’s cooked.
- Add in the tomato wedges.
- Pour the water into the wok.
- Flavor with salt & sugar and mix.
- Put in the noodles and mix till well combined.
- Put in the beansprouts mix everything in for 1 minute.
- Sprinkle the chives and mix for 1/2 a minute just until well mixed. Turn off the heat.
- Scoop the noodles into a serving dish. Top with half boiled eggs.
- Sprinkle with salad/lettuce, sliced bird’s eye chillies and crispy fried noodles.
- Serve with cherry tomatoes and calamansi lime at the side.
Chef's Notes
- To make half boiled eggs, bring the water up to a boil, then lower the heat to a simmer. Add the eggs to the pot and cook for 5 mins for a runny egg and 7 mins for a slightly firmer, easier to scoop eggs.
- To make the crunchy yellow noodle, cut the yellow noodles into 1/2 inch lengths. Heat the oil and when the temperature hits 190ºC, put a handful of the chopped noodles into the hot oil. Fry for 3 mins and drain. Alternately, you could air-fry for 4 mins at 180ºC
