NuMee Cups

Ingredients
- 1 small loaf of bread, edges trimmed
- 2 tbsp of butter & 1 tbsp extra for greasing
- 2 large red onion, chopped
- 2 cloves of garlic, chopped
- 250gms minced beef/chicken
- 1 carrot, grated
- 1/4 cup chinese celery, chopped
- 2 tsp salt
- 2 tsp pepper
- 2 cups of evaporated milk
- 1 cup of water
- 4 eggs, beaten
- 1 cup grated cheddar cheese
- 1 pack yellow noodles
- 5 pcs of bread, toasted & ground
how to cook
- Heat up a pan and melt the butter. Saute’ the onions & garlic.
- Put in the minced beef/chicken & stir until cooked through for about 3 minutes.
- Add the carrots and cook a further 2 mins.
- Put in the chinese celery, salt & pepper.
- Lastly put the noodles & grated cheese into the meat mixture and mix well. Set aside.
- Put in the beaten eggs, milk and water into a jug and mix well.
- Take a piece of trimmed bread and press to form the base of the NuMee Cups.
- Twirl a fork of noodle over the bread cups to fill up the muffin mould capacity.
- Pour the custard mixture over the noodles, till 3/4 full.
- Sprinkle the top of the NuMee Cups with breadcrumbs.
- Bake in a 180ºC preheated oven for 20 mins or till golden brown and set.
Chef's Notes
- Bread slices for the NuMee Cups is more manageable if it is rolled flat with a rolling pin first.
