Ingredients

  • 3 cups of cooking oil
  • 1 pack of yellow noodles
  • 5 stalks of curry leaves
  • 2 tsp curry powder
  • 1/2 tsp ground turmeric
  • 1/2 tsp chilli powder powder
  • 1/2 tsp ground cumin
  • 1/2 tsp ground fennel
  • 2 tsp salt
  • 1 1/2 tsp pepper

How to Cook

  • Heat oil for deep frying.
  • Cut yellow noodles into 1 1/2 inch lengths.
  • Deep fry the yellow noodles in hot oil for 2 mins or until golden brown and crisp.
  • Lift up from oil and drain.
  • Heat a wok with the sauteeing oil.
  • Put in the chilli paste and cook on low flame for 2 mins until the oil separates.
  • Put in the sugar, salt & vinegar.
  • Cook for 3 mins more or until the gravy bubbles to becomes sticky and glossy.
  • Turn off the flame and put in the fried noodles. Stir until well mixed.
  • Scoop onto a plate to serve or keep airtight in a glass bottle.

Chef's Notes

  • The crispy noodles need to be at room temperature when mixing it with the chilli sira. Otherwise it will soften up when mixed, which will lose it’s crispiness.
  • It is also vital for the chilli sira to be obtain a sticky and thick texture before putting in the crispy noodles as that will also cause the noodles to lose it’s crispiness.

Ingredients

  • 3 cups of cooking oil
  • 1 pack of yellow noodles
  • 5 stalks of curry leaves
  • 2 tsp curry powder
  • 1/2 tsp ground turmeric
  • 1/2 tsp chilli powder powder
  • 1/2 tsp ground cumin
  • 1/2 tsp ground fennel
  • 2 tsp salt
  • 1 1/2 tsp pepper

How to Cook

  • Slice the yellow noodles into 1 1/2 inch lengths.
  • Fry the noodles in hot oil for 2 mins, on medium heat.
  • Put the curry leaves into the noodles in the hot oil and fry together for 1 minute before lifting them out of the oil and drain.
  • Place the drained noodles in a wide stainless steel bowl.
  • In a bowl, mix all the ground ingredients till well combined.
  • Put the mixed spices into a sprinkling bottle.
  • Sprinkle the seasoned ground spice ingredients over the fried noodles and shake till well coated.
  • Store in an airtight container. Keeps well for 3 months.

Chef's Notes

  • When sprinkling the spices onto warm fried noodles, the seasonings with stick better to the noodles. If it’s already at room temperature, the ground spices won’t stick so well.
